Interestingly, a metabolomic study demonstrated the different roles of polyphenols in lipopolysaccharide-induced mouse embryonic fibroblast cells, with Theobroma cacao exerting mainly antioxidant properties and Lippia citriodora exerting anti-inflammatory effects mainly based on the reduction of pro-inflammatory cytokine and MCP-1 production, it was confirmed that the anti-inflammatory function of polyphenols could not be attributed to one mechanism of action but rather the coordination between different pathways and mechanisms (104) ( Figure 4 )
